A Analisis Kinerja Mesin Pengering Kulit Ikan Patin Dengan Sistem Kontrol Otomatis Berdasarkan Variasi Suhu Terhadap Kadar Air
Abstract
Crackers are a very popular snack among Indonesian people and are often used as a complement to various dishes or as a side dish. In other words, crackers are a food that cannot be separated from people’s lives. Therefore, cracker production must continue to meet consumer needs. One of the processes in making crackers is the drying process, but most people still do it the traditional way, namely outdoors by relying on sunlight. Traditional drying has several constraints, including heat fluctuations, poor cleanliness, and the need for relatively large space. Considering that Indonesia has two seasons, namely the dry season and the rainy season, the drying process during the rainy season is an obstacle in the production of crackers. If the heat needed for the drying process is not available. The development of drying technology, namely a fish skin drying machine with a cabinet drying type, is an alternative in efforts to overcome the problem in the fish skin drying process. The method used to realize this, the researcher conducted several studies, namely descriptive, literature, observation. Based on the data from the 1-hour drying process, the temperature in the drying machine was 60 0C from the initial temperature of 35 0C and the humadity in the drying machine room wa 17% based on the thermocouple sensor and tge DHT12 humadity sensor. And the results of the 2-hour drying process, the temperature in the drying machine is 70 0C from the initial temperature of the machine room of 40 0C and the humadity of the drying machine room is 12% based on the thermocouple sensor and the DHT12 humadity sensor, the results of measuring the water content produced in the drying process for 1 hour are 4.1% with an initial water content of 15.3% and in the drying process for 2 hours is 0.3% with the same water content of 15.3% measured using a moisture mater to determine the water content before and after the drying process.
